Canning tomatoes

Getting ready to can the second batch of tomatoes this season, with lots more coming. Canning tomatoes is hot, tedious work, but, like I say...

The only thing I hate more than canning tomatoes is not having canned tomatoes available when I need them.... :)

So here goes.... Turn on the stove and being out the ice bucket...

Canned Greek Pepperoncinis (with recipe)

I have a TON of these beautiful pepperoncinis coming on. I bought them from Burpee on a whim and they are growing into beautiful three-foot-tall pepper bushes just LOADED with peppers. When you bite into one, they taste like a sweet pepper with a hint of the classic pepperoncini taste. My only disappointment is that they are not hot, so when canning, I slice open a Serrano pepper or two (also from the garden) and mix it into the jar with the pepperoncinis.

Canning them is a breeze, and very intuitive if you are experienced with canning.

I do love this time of year ... the tomatoes are coming on strong and it's becoming a daily thing! I had a rather small harvest today, but was able to can two quarts ... this will make some wonderful chili or soup or lasagna this winter ... canning tomatoes is easy, once you get the hang of it.
