Peanut Brittle

2 cups white sugar
1 cup white corn syrup
3 cups raw peanuts
2 tbsp butter
2 tsp baking soda
1 tsp vanilla

Bring 1/2 cup water to boil in medium to large saucepan. Then add 1 cup corn syrup. Continue on high heat for a few minutes or until liquid starts to simmer, then add two cups of sugar. Stir until dissolved and continue stirring five to seven minutes until  mixture will spin a thread. If you don't know what this means, you'll know it when you see it. Now add 3 cups raw peanuts and reduce heat until mixture turns a golden brown, stirring often. Remove from heat and add 2 tbsp butter and 1 tsp vanilla. Add 2 tsp baking soda. Stir quickly and thoroughly. Spread on a well-buttered 12x18-inch cookie sheet. Place in cool area until set. Once cool, tap with the handle side of a butter knife to break up. It's that easy!

First, I heat up the cookie sheet and rub a stick of butter over it. The heat melts and butter and gives you a nice even coat of butter on the sheet. Very important and this will add flavor and make it easy for the brittle to detach from the cookie sheet.

To clean up, soak the pan and stirring spoon, etc. in very hot water. It will basically clean itself. Enjoy!
