Black Forest Coffee Cake
2 cups sifted flour
1 tsp salt
4 tsp baking powder
1/4 pound (1 stick) butter at room temperature
1 cup sugar
2 beaten eggs, at room temperature
1 cup milk
2 tart apples, cored, peeled, and thinly sliced
1/2 cup brown sugar
1/8 tsp nutmeg
1/8 tsp cloves
Confectioner's sugar (optional)
Preheat oven to 350 F. Butter well a 13x9 inch baking pan.
Resift the flour with the salt and baking powder and set aside. Cream the butter and sugar until light and fluffy. Add the eggs and stir well. Add the flour mixture alternately with the milk, beginning and ending with the flour mixture. Beat thoroughly and pour into the pan. Place the apple slices in rows across the top of the batter and press them down lightly to keep them in place.
Combine the brown sugar with the nutmeg and cloves, mixing well, and sprinkle over the apples. Bake about 40 - 45 minutes. Sprinkle with confectioner's sugar, if desired. Serve hot or at room temperature.
