Carrot Cake with Cream Cheese frosting

Cake:
1 cup sugar
3/4 cup oil
2 eggs
1 cup flour
1 tsp cinnamon
1 tsp baking soda
1 1/2 tsp backing powder
1 1/2 tsp vanilla
2 cups carrots, grated
1 small (8 oz) can pineapple

Sift together flour, cinnamon, baking soda and baking powder.

Cream together sugar, oil and eggs. Add flour mixture and vanilla.

Fold in carrots and pineapple. Bake at 324 degrees for 45 minutes in a greased 9x13-inch pan.

Frosting:
8 oz. cream cheese, softened
1 cube butter, softened
1 3/4 cup powdered sugar
1 tsp vanilla

Beat together until fluffy. Spread over cooled cake.
