Lemony Bliss Cookies
1 stick of butter, softened
1 1/2 cup sugar
1/4 cup lemon juice
1 tbs freshly grated lemon zest
1/2 teaspoon baking powder
2 1/2 cups all-purpose flour
Preheat oven to 350 degrees. Prepare baking trays with parchment paper.
Cream together the butter and sugar together until blended. Add eggs, one at a time and mix well. Mix in lemon juice and zest.
Once mixture is well blended, add baking powder and flour. Stir into a good batter.
Place rounded batter balls into a bowl of powdered sugar to coat and then place on baking sheets. Bake 15 minutes and let cools on baking sheets before moving to cooling racks. Makes about two and a half dozen cookies.
