Now here's a great idea .... Peanut Butter Protein bars! I found the recipe here (http://chocolatecoveredkatie.com/2013/04/04/homemade-peanut-butter-protein-bars/) and ran with it. Not a lot of ingredients, and it doesn't take more than five minutes to prepare. As you'll see when you visit the link I just posted, it's just a bit of peanut butter, applesauce, brown sugar, baking soda, protein powder and ... for my special touch ... dried currants! Here, I've rolled it out with a rolling pin and into the freezer it goes. Once it sets up, I'll cut this into individual bars and package them for later. Easy, simple, healthy and DELICIOUS! And not only that, it appeals to the new dairy-free me!
