Carrot Cake with Cream Cheese frosting

1 cup sugar
3/4 cup oil
2 eggs
1 cup flour
1 tsp cinnamon
1 tsp baking soda
1 1/2 tsp backing powder
1 1/2 tsp vanilla
2 cups carrots, grated
1 small (8 oz) can pineapple

Sift together flour, cinnamon, baking soda and baking powder.

Cream together sugar, oil and eggs. Add flour mixture and vanilla.

Fold in carrots and pineapple. Bake at 324 degrees for 45 minutes in a greased 9x13-inch pan.

Rhubarb Cake

Rhubarb cake

Line a 9x13 cake pan with:

5 cups rhubarb
1/2 cup sugar (sprinkled over rhubarb)
1 sm. Strawberry jello (sprinkled over rhubarb)
1 1/c cup miniature marshmallows - over all
1 pkg yellow (lemon) cake mix (dry). Crumble with hands so no lumps. Sprinkle over all other ingredients.
1 cup warm water, poured very slowly over cake mix
1/c cup melted margarine - drizzled over all

Bake at 350 degrees for 40 - 45 minutes.
Serve warm or cold with whipped cream.

Black Forest Coffee Cake

2 cups sifted flour
1 tsp salt
4 tsp baking powder
1/4 pound (1 stick) butter at room temperature
1 cup sugar
2 beaten eggs, at room temperature
1 cup milk
2 tart apples, cored, peeled, and thinly sliced
1/2 cup brown sugar
1/8 tsp nutmeg
1/8 tsp cloves
Confectioner's sugar (optional)

Preheat oven to 350 F. Butter well a 13x9 inch baking pan.

Blueberry Coffee Cake

1.50 cup All-purpose flour
0.75 cup Sugar
2.50 tsp Baking powder
1.00 tsp Salt
0.25 cup Vegetable oil
0.75 cup Milk
1.00 egg
1.50 cup blueberries (I use fresh, but imagine frozen would work)
0.33 cup All-purpose flour
0.50 cup brown sugar, firmly packed
0.50 tsp cinnamon (or more to taste)
0.25 cup firm butter (1/2 stick)

In a medium mixing bowl, blend together 1-1/2 cups flour, sugar,
baking powder, salt, oil, milk, egg and 1 cup blueberries.

Cake Mix Cookies

1 cake mix (lemon or chocolate)
2 cups cool whip (thawed)
1 egg

Mix together, roll into balls, roll in powdered sugar.
Bake 350 for 10 minutes.
