Beef Goulash

2 lbs ground beef
3 tsp minced garlic
1 large onion, finely chopped
1/2 cup beef broth
1/3 cup olive oil
2 1/2 cups of water
30 ounces of tomato sauce
30 ounces chopped tomatoes
1 tbs Italian seasoning
1 tbs Adobo seasoning
3 bay leaves
1 tbs seasoned salt
1/2 tbs black pepper
2 cups elbow macaroni
1 cup shredded mozarella cheese
1/2 cup shredded cheddar cheese

Brown ground beef in a skillet over medium high heat and remove before fully cooked.

Corn Casserole

1 can drained whole kernel corn
1 can creamed corn
2 eggs, beaten
1 stick butter, melted
4 heaping tbs. all purpose flour
2 tbs.. sugar
1/4 cup of diced green pepper
1 cup milk (okay to substitute with Almond or Cashew milk)
1/2 cup shredded cheddar cheese (okay to substitute with Daiya cheese)
1/4 tsp each salt and pepper

Combine all ingredients and pour into a greased casserole dish. Bake at 350 degrees for 1 hr. 20 min

DT's Goulash

1 lb. hamburger (cooked/drained/seasoned)
4 cups cooked, drained noodles
1 cup corn
1 cup chopped olives
1 cup cream-of-any-kind soup
1 cup grated cheese.

Mix all but 1/4 cup of cheese. Bake at 350 degrees for 20 minutes. Sprinkle rest of cheese over top and bake for 5 more minutes. Enjoy!

Zucchini Bake

2 heaping cups diced zucchini
1/2 cup chopped celery
1/2 cup chopped onion
1/2 to 3/4 cup chopped tomatoes
1/3 cup oil
1/2 cup grated parmesan cheese
1/2 cup cheddar (or other) cheese
Salt, pepper and garlic to taste
3 well-beaten eggs
Blend in 3/4 cup Bisquick

Mix together all the above and pour into a 9-inch baking dish.

Preheat oven to 350 degrees and bake for 35 to 40 minutes or until golden brown.

Optional: After baking and before serving, top with your favorite salsa!

Zucchini Garden Casserole

4 medium ripe tomatoes, peeled, sliced
4 zucchini, about 1.5 pounds, sliced
2 tsp salt, divided
1.5 lbs lean ground beef
2/3 cup uncooked long grain rice
2 tbs parsley, chopped
1/4 cup green bell pepper, chopped
1/4 cup onion, chopped
1/4 tsp cinnamon
1/4 tsp allspice
1/4 tsp pepper
1 cup tomato juice
1 cup longhorn cheese, shredded

Nancy's Casserole

1 pkg 8 oz noodles
2 tbs butter
1 lb gr beef
2 cans (7.5 oz) tomato sauce
1 pkg (8 oz) cream cheese
1 c cottage cheese
1/2 c sour cream
1 gr pepper, chopped
1 onion, chopped

Boil noodles, drain, stir in butter and set aside.

Saute ground beef (drain fat), add tomato sauce and remove from heat.

Mix cream cheese, cottage cheese and sour cream together.

In greased lasagna pan alternate layers of buttered noodles, cheese mixture,
then buttered noodles.

NOTE: I made this here and doubled the recipe to fit a lasagna pan. You may want to try it. Try lining your casserole dish with corn tortillas before adding mixture (see photos)! I also used multi-colored corn chips for added color. Also, as my body does not digest cheese well, I am always looking for Mexican recipes that use little or no cheese. I make mine without cheddar, but do add a few cubes of Cotija cheese to the mixture...
