Zucchini Rhubarb bread

2 cups shredded zucchini
2 tbsp orange juice
2 cups sugar
3 cups flour
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp salt
1/2 tsp baking powder
2 tsp baking soda
3 large eggs
1 cup oil
2 tsp vanilla
1 cup chopped nuts
Preheat oven to 350 degrees.
In a large pan, add the rhubarb, orange juice and 2 tablesppons of sugar. Heat until boiling, then simmer uncovered for a few minutes, allowing the rhubarb to become tender.
